“Jennifer Aniston” Salad

No, this isn’t the salad that Jennifer Aniston said she ate every day on the set of Friends. This is one that she posted on Instagram and called a perfect salad. We agree! There’s a reason it’s gone viral on social media…not only is it delicious, it’s just right for summer days when it’s too hot to really cook! Try it over a bed of spinach leaves or add your favorite protein for a more substantial meal. As always, we hope you enjoy it and please let us know if you try it!

I N G R E D I E N T S
For the Salad –
• 1 cup quinoa, cooked
• 15 oz chickpeas, drained and rinsed
• 2 cups Persian (or other small) cucumbers, chopped
• ½ cup red onion minced (soak in water first to get rid of the bite)
• 1/3 cup feta cheese, crumbled
• 1/3 cup roasted salted pistachios, chopped
• 1/2 cup fresh parsley, finely chopped
• 1/2 cup fresh mint leaves, finely chopped
For the Dressing –
• 1/4 cup lemon juice
• 1/4 cup extra virgin olive oil
• 1 Tbsp honey
• salt and pepper to taste

D I R E C T I O N S

1. Make the dressing: Add ingredients to a jar with a tight fitting lid, or small bowl, then shake or whisk to combine.
2. Add quinoa (freshly cooked or chilled, depending on your preference) to a large mixing bowl, then add chickpeas, remaining veggies, and fresh herbs.
3.Drizzle with dressing, then toss to combine. Top with pistachios and feta cheese. Enjoy immediately or refrigerate for up to 3 days.
